Weekend Highlight

So, I’ll admit I’m a busy lady, but besides that, coming up for content for blogging is quite that task.  Even thinking about sitting down to make a game plan is too time consuming, but in order to keep this blog going I guess I’ll have to break down at some point.  I’ve decided that Monday’s will be some highlight from my weekend adventures.

This Sunday I went to see the Redskins vs. Raiders at the Oakland Coliseum:

What a great atmosphere, if you’re a Raiders fan, otherwise it’s extremely intimidating.  I was way too scared to cheer too loud or make a move, these people will totally throw popcorn and heckle you, something I don’t want to participate in.  I can feed myself, I don’t need popcorn lodged at me by a stranger and I’m not a big shit-talker, so…yea, there’s that.  On the experience side, everyone is cheering the whole time, lots of hardcore fans, tons of noise.  Even though the Raiders are great fans, they seem to give up (like most fans) when you know you’re getting your butt kicked! Once the Raider’s started losing, fans started leaving.  People bolted once they realize the Redskins were going to actually win!  It was a big day for all us fans, it’s a rare sight.

Halftime was an odd Zumba showcase:

I think the Redskins saw all the Zumba action, got excited and started playing well.  Also, did you notice that it’s a shared field with the baseball field?  I’ve been here for many Oakland A’s games, but never football.  Great game Skins!  Let’s keep up with this winning thing!

How is it possible to ship fresh fruit, without mold or smells?  It’s not.  No, I didn’t find this out the hard way, it’s common sense, come on!  So, in hopes of one day sending out scone kits to the masses, I need to start testing with dried, “packagable” fruit.  My first attempt included Pineapples and Apples, I thought it was funny and could potentially taste good.

I still went the gluten-free route with almond flour and  coconut oil, but this time I used 1 container of coconut yogurt and 1 egg.  The result left the scones a little under moist, maybe higher yogurt content?

Still edible, those dried fruits gave the scones a tangy kick.  You know, that tang that has one eye squinting, your mouth salivating and your lips puckered.  Super cute face, I’m sure.  Maybe one should eat these in a room by themselves to not scare their friends.

Ever have those days where you say, “I’m leaving early – no matter what?”  Well, today was definitely that day, except the outcome was, an hour meeting, turns into 2 hours and that turns into another meeting after the real meeting.  Either way things got done, but I’m beat!

I think late nights call for light dinners, something easy to throw together and healthy enough to settle those late-night tummy rumbles.  This salad is the perfect solution.  Throw in a little spinach, a little kale, segmented and sliced oranges, toasted hazelnuts, diced red onions, a squeeze of lemon and a drizzle of olive oil…salt as needed.

How about those Skins?!  I know, I know, last nights game was not really beautiful, but honestly us Skins fans should be used to this, it’s more normal than walking out of my apt and smelling fresh pee in the morning.  (Remember: I’m a city living fool)  Last year we were blessed with a healthy dose of Mr. RGIII and this year, well, we’re trying to work out the kinks…I hope.  I mean, did you all see the second half?!  We almost came back!  ALMOST!

I feel like this quote was most appropriate for last nights game and my life of dodging cars and bicycles as I perambulate through San Francisco.

Sorry for my absence, I’ve been… slacking…

During my slacking adventures I’ve partaken in a game night, Cards Against Humanity anyone?  Entrance into this little escapade was dessert.  Since I’ve been trying to engage in the Paleo Diet I thought it most appropriate to blow that deal and make some Chocolate Mint Mousse, nothing Paleo about that!  I put a twist on this Chocolate Mousse recipe, adding an extra cup of cream and an extra yolk bumped up the servings to make 8 cups of deliciousness.

My chocolate concoction included milk chocolate, semi-chocolate and Trader Joe’s most amazing mint chocolates:

I plopped in 6 or 7 sprigs of mint into the mix and kapow!  Amazing mint flavor.  A few chocolate covered espresso beans and another sprig of mint on top for “flare” and voila, Game Night Dessert!

All shapes, all sizes, all kinds, I just love them.  If I could keep a whole basket around, for a day, it would be a miracle.  Thank goodness they are being sold everywhere!  Walked down the street to do some furniture shopping yesterday and I came home with another basket of figs.  Yes, I may have a problem.

So, when I said that I’d post the recipe in the post earlier today, I meant, “I’l post my epic fail of what was supposed to be an awesome scone but really turned into burned crumbles of the idea of a scone.”  Oops.

Sans the complete flatness and burned edges these actually tasted quite good.  The boyfriend-roommate and I actually polished them all off.  I warned him, “do not share with anyone else!” I was too embarrassed to let anyone try/see them.  OMG.

This time around I tried almond flour; I have to admit that the kitchen was kind of warm so the mixture of that and coconut oil that wasn’t cold enough, are both contributing factors.  I mean it’s about presentation too!  I can’t make an ugly scones, ew.

These are definite “make-again” because the taste was chocolate and hazelnut, you really can’t go wrong – unless you burn them and turn them into pancakes. Not. Bitter. At. All.

Oh to be 17 again (know the song?).  My birthday recently passed (I’ve stopped counting at 28) so a lovely friend of mine decided to feed my passion for sweet wines.  Yes, I like them sweet, not acidic, usually white and sometimes with bubbles (just in case you are in the market).  So, understanding my satiation for all those listed, my friend knew I should add this Pineapple Wine to my repertoire.  I thought I’d share because it’s so unique, it actually tastes like pineapple vodka, not sure if that’s good or bad, but I enjoyed it nonetheless.  It was actually discussed that this would be the perfect base to a white sangria!  Yes, it has a hint of fruitiness itself and not overwhelming.  It’s crazy, you should really try it yourself!  I’ve taken note of where to make this purchase and will be whipping up a white sangria next party!
