Sorry for my absence, I’ve been… slacking…

During my slacking adventures I’ve partaken in a game night, Cards Against Humanity anyone?  Entrance into this little escapade was dessert.  Since I’ve been trying to engage in the Paleo Diet I thought it most appropriate to blow that deal and make some Chocolate Mint Mousse, nothing Paleo about that!  I put a twist on this Chocolate Mousse recipe, adding an extra cup of cream and an extra yolk bumped up the servings to make 8 cups of deliciousness.

My chocolate concoction included milk chocolate, semi-chocolate and Trader Joe’s most amazing mint chocolates:

I plopped in 6 or 7 sprigs of mint into the mix and kapow!  Amazing mint flavor.  A few chocolate covered espresso beans and another sprig of mint on top for “flare” and voila, Game Night Dessert!

Options!

You need to mix sweet with not-so-sweet, you just never know with men, oh those men…

I figured a dessert bar was in order, it would enable me to add color and with different shapes and sizes of each dessert, making the table dynamic and interesting.  I came up with a menu of four options: Cheesecake bites, Nutella and puff pastry bites, caramel corn and cake push-up pops.  Lesson learned:  no-one had a clue what to do with the push-up pops, what, did these people not grow up with an ice cream truck and ice cream push-up pops?! I thought it was genius, but this will probably be the last time that I use them.  Too many questions were asked and not enough devouring.

I followed this caramel corn recipe, it turned out perfect, crispy and sugary.  Next  time I’d consider adding peanuts because, if you didn’t read previous posts, peanuts (specifically peanut butter) are my favorite thing ever.  The cheesecake recipe was an iteration of this recipe, sans the sour cream.  I made the cheesecake mixture and kinda, sorta, maybe forgot the sour cream; after realizing that maybe if I didn’t have spaghetti brain and would focus long enough to read through the whole recipe I should have added it before saying “I’m done!”, but after tasting the mixture, I decided that it wasn’t necessary at all.  (Blueberries on the table were for topping off the cheesecake, if desired). Nutella bites were from this site and since I’m a trader joes fan and had piled on so much for the menu, i bought (shhhhh) their nutella, which is actually an almond and chocolate mix.  It worked perfectly!  Last but not least the cake push-pops, they were either vanilla or chocolate cake layers with whipped coconut cream, sweetened coconut, and melted chocolate.  Yes, yummy sounding, but apparently a confusing dessert, no harsh feelings at all.

Blueberry Crumble – Frozen Edition

Say hello to this guy, the yummiest blueberry crumble that you’ll ever taste, but the frozen version.  For the “with intention” workshop, that I catered a couple months ago, I tried to focus on vegan dishes, in doing so I came across this recipe: http://culinarykarma.net/portfolio/raw-blueberry-streusal-bars/ sans the “frosting.”

This dessert was a huge hit, eat it immediately out of the freezer or let sit for 20 minutes.  The usual warm blueberry crumble is definitely challenged by this refreshing and cold version.  The blueberry has a bold flavor and a cashew crust that just melts in your mouth, I’d make it again for any event!

But really, when you compare these cheesecake filled strawberries and vegan chocolate truffles, blueberry crumble wins everytime!

Happy Monday!  Enjoy it with something enjoyable like this or a three day juice cleanse challenge like this: Hacking the BluePrint Cleanse that Z and I are trying to do.  Wish us luck, I like to think of this cleanse as a revert back to babyhood, where solids do not exist in our diet.  Hopefully, no crying or diapers necessary.
